Wheat Flour Type T-500 contains the largest amount of ash, so it is a little darker, meaning a mild grey colour. It is distinguishable by its fine granulation and is recommended for preparing confections made with fermented dough (pizza, rolls, strudels and similar), which use yeast as a means for making the dough rise. These types of pastries however differ slightly with their coarse dough structure.
