It is distinguishable by its mild gold colour and sharp granulation from which it received it name. It is recommended for preparing biscuit dough, cakes and pita, that is to say for those confections that require baking powder to rise. |
Wheat Flour Type T-500 contains the largest amount of ash, so it is a little darker, meaning a mild grey colour. It is distinguishable by its fine granulation and is recommended for preparing confections made with fermented dough (pizza, rolls, strudels and similar), which use yeast as a means for making the dough rise. These types of pastries however differ slightly with their coarse dough structure. |
